  • Marinating Time: 30 minutes (up to 4 hours)

  • Cook Time: 15 minutes

  • Total Time: 1 hour 5 minutes

  • Yield: 4 servings

  • Difficulty & Intensity: Easy to Medium (Cooking Intensity: Moderate — basic knife skills, pan-searing or grilling)

  • Flavor Profile: Zesty, savory, garlic-herb, and refreshing

Ingredients

1. The Lemon-Herb Chicken Marinade

  • 1.5 lbs (680g) boneless, skinless chicken breasts (or thighs), cut into bite-sized 1-inch cubes

  • 3 tbsp extra virgin olive oil

  • 2 tbsp fresh lemon juice (approx. 1 medium lemon)

  • 1 tbsp lemon zest

  • 3 cloves garlic, minced

  • 1 tbsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp smoked paprika

  • 1 tsp kosher salt

  • ½ tsp freshly cracked black pepper

2. The Homemade Tzatziki Sauce

  • 1 cup full-fat Greek yogurt (plain)

  • 1 medium English cucumber, grated

  • 1 tbsp extra virgin olive oil

  • 1 tbsp fresh lemon juice

  • 1 clove garlic, finely grated or pasted

  • 2 tbsp fresh dill, finely chopped

  • ½ tsp salt (plus extra for draining the cucumber)

3. The Flatbreads & Toppings

  • 4 large artisan flatbreads, naan, or pita pockets

  • 1 cup cherry tomatoes, halved

  • 1 cup English cucumber, diced

  • ½ medium red onion, thinly sliced

  • ½ cup Kalamata olives, pitted and halved

  • ½ cup Feta cheese, crumbled

  • Fresh mint or parsley for garnish

Step-by-Step Instructions

1.Marinate the Chicken:Prep: 10 min | Rest: 30 min.

In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, paprika, salt, and black pepper. Add the cubed chicken, tossing until every piece is evenly coated. Cover and refrigerate for at least 30 minutes (or up to 4 hours for maximum flavor depth).

2.Prepare the Homemade Tzatziki:Prep: 10 min.

Grate the cucumber using the large holes of a box grater. Place the grated cucumber in a fine-mesh strainer or clean kitchen towel, sprinkle with a pinch of salt, and let sit for 5 minutes. Squeeze out as much excess liquid as possible — dry cucumber is the secret to a thick sauce. In a small bowl, mix the drained cucumber, Greek yogurt, olive oil, lemon juice, grated garlic, chopped dill, and ½ tsp salt. Cover and chill in the fridge until ready to serve.

3.Cook the Chicken:Heat: Medium-High | Cook: 8–10 min.

Heat 1 tablespoon of olive oil in a large cast-iron skillet or grill pan over medium-high heat (intensity: medium-high). Once the pan is shimmering, add the chicken pieces in a single layer (cook in batches if needed to avoid overcrowding). Cook for 4 to 5 minutes per side until browned with a nice sear and the internal temperature reaches 165°F (74°C). Remove from heat and let rest for 3 minutes.

4.Warm and Toast the Flatbreads:Heat: Medium | Cook: 1–2 min per side.

Wipe down the skillet or use a warm grill. Lightly brush both sides of the flatbreads with olive oil. Heat over medium heat for about 1 to 2 minutes per side until warm, pliable, and lightly golden with subtle char marks.

5.Assemble and Serve:Assembly: 5 min.

Lay the warm flatbreads flat on a cutting board or serving platter. Spread a generous layer of chilled tzatziki across each flatbread. Top evenly with warm, cooked chicken, cherry tomatoes, diced cucumber, red onion, and Kalamata olives. Finish with a sprinkle of crumbled feta cheese, fresh herbs, and a light squeeze of fresh lemon juice.

Recipe Shelf Life & Storage Instructions

Proper storage keeps your leftover components fresh without making the flatbread soggy.

  • Refrigeration: Store components separately in airtight containers in the refrigerator.

    • Chicken: Stays fresh for 3 to 4 days.

    • Tzatziki Sauce: Stays fresh for 4 to 5 days (give it a quick stir before using, as natural separation may occur).

    • Prepared Vegetables: Stay crisp for 2 to 3 days.

  • Freezing: You can freeze the raw, marinated chicken in a ziplock bag for up to 2 months. Defrost in the fridge overnight before cooking. Do not freeze the tzatziki sauce, as Greek yogurt will split upon thawing.

  • Reheating: Reheat the chicken in a skillet over low heat or in the microwave until warm. Warm the flatbread in a pan or oven, then assemble fresh.
