  • Wooden spoon or meat chopper

  • Measuring cups and spoons

  • Can opener

  • Soup ladle

Ingredients List

The Base & Aromatics

  • 1.5 lbs (680g) Lean Ground Beef (85/15 or 90/10 blend works best)

  • 1 medium Yellow Onion, finely diced

  • 3 cloves Garlic, minced

  • 1 tbsp Olive oil (or avocado oil)

The Tex-Mex Seasoning & Liquid Base

  • 1 packet (1 oz / 28g) Taco Seasoning (or homemade mix: chili powder, cumin, paprika, onion powder, garlic powder, oregano)

  • 1 packet (1 oz / 28g) Dry Ranch Seasoning Mix

  • 2 cups (480ml) Low-sodium beef broth (or chicken broth)

  • 1 can (14.5 oz / 410g) Petite diced tomatoes, undrained

  • 1 can (10 oz / 283g) Rotel (diced tomatoes with green chilies), undrained

  • 1 can (15 oz / 425g) Black beans, rinsed and drained

  • 1 can (15 oz / 425g) Pinto beans, rinsed and drained

  • 1 cup (150g) Sweet corn kernels (canned, frozen, or fresh)

The Creamy Element

  • 8 oz (225g) Full-fat cream cheese, softened and cut into cubes

  • 1 cup (100g) Sharp cheddar cheese or Mexican blend cheese, shredded

Step-by-Step Instructions

1.Brown the Beef & Aromatics:Medium-High Heat | 6-8 minutes.

Heat olive oil in a large Dutch oven or stockpot over medium-high heat. Add the ground beef and diced yellow onion. Break the beef apart with a wooden spoon or meat chopper as it cooks.

Once the beef is browned and no pink remains, drain off any excess fat if desired. Add the minced garlic and cook for another 60 seconds until fragrant.

2.Season & Combine:Medium Heat | 2 minutes.

Reduce heat to medium. Sprinkle the taco seasoning and ranch seasoning mix directly over the cooked beef and onions. Stir thoroughly for about 1 minute to coat the meat and toast the spices.

3.Simmer the Soup Base:Medium-Low Heat | 10-15 minutes.

Pour in the beef broth, undrained diced tomatoes, undrained Rotel, drained black beans, drained pinto beans, and corn.

Stir well to incorporate all ingredients. Bring the mixture to a gentle boil, then reduce the heat to low, cover the pot, and let it simmer for 10 to 15 minutes to allow the flavors to merge.

4.Make it Creamy:Low Heat | 3-5 minutes.

Reduce heat to low. Add the cubed, room-temperature cream cheese and shredded cheddar cheese to the pot.

Whisk or stir continuously until the cheeses are completely melted and smoothly integrated into the broth. Note: Keeping the heat low prevents the cream cheese from separating.

5.Garnish & Serve:Immediate.

Ladle the hot soup into serving bowls. Customize with your favorite taco toppings and serve immediately with warm tortilla chips.

Recommended Toppings

Half the fun of taco soup is loading up your bowl! Set out a topping bar so everyone can customize their dish:

  • Crunch: Tortilla strips, crushed tortilla chips, or pork rinds.

  • Freshness: Chopped fresh cilantro, diced avocado, or finely sliced green onions.

  • Acidity: Fresh lime wedges or pickled jalapeño slices.

  • Extra Creaminess: A dollop of sour cream or Greek yogurt.

Pro Tips for the Best Results

  1. Room Temperature Cream Cheese: Cold cream cheese will take longer to melt and may leave small white specks in your soup. Take the block out of the fridge 30 minutes before cooking, or microwave it for 15 seconds to soften.

  2. Control the Salt: Dry ranch mix and taco seasoning both contain sodium. Using low-sodium beef broth and low-sodium canned beans helps you maintain complete control over the final salt balance.

  3. Adjusting Spice Intensity:

    • For Mild: Use Original Rotel (or standard diced tomatoes) and mild taco seasoning.

    • For Extra Hot: Use Hot Rotel, add sliced fresh jalapeños with the garlic, and add ¼ tsp of cayenne pepper.

Storage, Freezing, & Reheating

  • Refrigerator Storage: Store cooled leftovers in an airtight container in the fridge for up to 4 days. The soup will thicken slightly as it cools; simply stir in a splash of broth or water when reheating.

  • Reheating: Warm individual portions in the microwave for 1.5 to 2 minutes, or heat on the stove over medium-low heat until thoroughly warmed through.

  • Freezing Note: Because this recipe contains cream cheese and cheddar, freezing can sometimes cause the dairy to separate slightly upon thawing. If you plan to freeze the soup, cook the recipe through Step 3, freeze the soup base, and stir in the cream cheese and cheddar fresh when reheating.
