Instructions

Step 1: Prepare the Crust

Crush the digestive biscuits into fine crumbs using a food processor or by placing them in a zip-top bag and crushing them with a rolling pin.

Transfer the crumbs into a mixing bowl.

Add melted butter, sugar, and cinnamon.

Mix thoroughly until the crumbs resemble wet sand.

Pour the mixture into an 8-inch springform pan.

Press firmly into the bottom using the back of a spoon or a flat-bottomed glass.

Refrigerate the crust while preparing the filling.

Time: 10 minutes

Step 2: Prepare the Gelatin

Sprinkle powdered gelatin over 3 tablespoons of cold water.

Allow it to bloom for 5 minutes.

Microwave for 10–15 seconds or gently heat until dissolved.

Allow it to cool slightly before using.

Time: 5 minutes

Step 3: Make the Cheesecake Filling

In a large bowl, beat softened cream cheese until completely smooth.

Add powdered sugar and continue mixing.

Mix in vanilla extract, lemon juice, and lemon zest.

Slowly pour in the cooled gelatin while mixing continuously.

In another bowl, whip the heavy cream until stiff peaks form.

Fold the whipped cream gently into the cream cheese mixture.

Do not overmix.

The filling should be light, fluffy, and smooth.

Time: 15 minutes

Step 4: Assemble the Cheesecake

Remove the chilled crust.

Pour the cheesecake filling over the biscuit base.

Smooth the top using an offset spatula.

Tap the pan gently on the counter to remove any air bubbles.

Cover with plastic wrap.

Refrigerate for at least 6 hours, preferably overnight.

Chilling Time: 6 hours

Step 5: Make the Blueberry Topping

Combine blueberries, sugar, water, and lemon juice in a saucepan.

Cook over medium heat until the blueberries begin to burst.

Mix cornstarch with 2 tablespoons cold water.

Pour the slurry into the blueberry mixture.

Cook until thick and glossy.

Remove from heat.

Cool completely before spreading over the cheesecake.

Cooking Time: 10 minutes

Step 6: Decorate

Remove the cheesecake from the refrigerator.

Spread the cooled blueberry topping evenly across the surface.

Decorate with:

  • Fresh blueberries
  • Lemon zest
  • Mint leaves
  • Whipped cream (optional)

Slice using a sharp knife dipped in warm water.

Serve chilled.

Tips for Success

  • Always use full-fat cream cheese for the creamiest texture.
  • Let the cream cheese soften to room temperature before mixing.
  • Chill overnight for the best consistency.
  • Fold the whipped cream gently to keep the filling airy.
  • Cool the blueberry topping completely before adding it to the cheesecake.
  • Use fresh lemon juice for a brighter flavor.
  • Clean the knife between slices for neat presentation.
