Why This Plate Is a Keto Powerhouse

When following a ketogenic or low-carb protocol, the goal isn’t just cutting carbs—it’s replacing those calories with nutrient-dense, healthy fats and quality protein that promote satiety and ketosis.

  • Sustained Ketosis: The combination of grass-fed beef fat, butter, and avocado oil yields clean energy without insulin spikes.

  • Potassium & Electrolyte Support: One of the most common pitfalls on keto is electrolyte loss. A single avocado supplies nearly 700 mg of potassium—more than a standard banana—helping prevent muscle cramps and keto flu symptoms.

  • Healthy Monounsaturated Fats: Avocados and high-quality olive oil are loaded with oleic acid, a heart-healthy fat that slows digestion and keeps you full for hours.

Choosing the Best Cut of Steak

While any quality cut works, Ribeye is the gold standard for keto. Its generous intramuscular marbling melts during cooking, providing natural juiciness and an optimal fat-to-protein ratio.

If you prefer a leaner cut like New York Strip or Top Sirloin, simply increase the garlic butter basting portion at the end to keep your fat macros high.

Pro Tip: Look for a steak that is at least 1.25 to 1.5 inches thick. Thinner steaks overcook in the middle before you can build a rich, golden-brown crust on the outside.

Kitchen Equipment Needed

  • Cast-Iron Skillet: Essential for retaining high heat and creating a deep, caramelized Maillard crust.

  • Instant-Read Meat Thermometer: Eliminates guesswork for precise internal doneness.

  • Tongs: For safely turning the steak and holding it on its side to render the fat cap.

  • Spoon: For basting the steak with melted herb butter.

Ingredients Breakdown

For the Steak:

  • 2 thick-cut Ribeye steaks (approx. 10–12 oz each, brought to room temperature)

  • 1.5 tbsp avocado oil or ghee (high smoke-point oil)

  • 1.5 tsp coarse sea salt or flaky kosher salt

  • 1 tsp freshly cracked black pepper

  • 1 tsp garlic powder

For the Garlic-Herb Butter Bast:

  • 3 tbsp unsalted butter (preferably grass-fed, like Kerrygold)

  • 3 cloves garlic, lightly smashed

  • 2 sprigs fresh rosemary

  • 3 sprigs fresh thyme

For the Avocado & Spinach Power Sides:

  • 2 large ripe Hass avocados, halved, pitted, and sliced or fanned

  • 4 cups fresh baby spinach

  • 1 tbsp extra virgin olive oil

  • 1 tbsp fresh lime juice

  • 1/2 tsp crushed red pepper flakes (optional)

  • Flaky sea salt to finish

Step-by-Step Cooking Guide

1.Prep & Season the Steak:10 minutes before cooking.

Remove your steaks from the refrigerator 20 to 30 minutes before cooking to take off the chill. Cold meat drops the pan temperature and causes steamy, uneven cooking. Pat both sides completely dry with paper towels. Rub all over with avocado oil, then season generously on all sides with coarse sea salt, black pepper, and garlic powder.

2.Sear the Steak:High heat | 4-6 minutes.

Place a heavy cast-iron skillet over high heat until it begins to lightly smoke. Place the steaks into the dry pan (the oil is already on the meat). Sear undisturbed for 2 to 3 minutes until a deep golden crust forms. Flip using tongs.

3.Butter Baste to Doneness:Medium heat | 3-4 minutes.

Reduce heat to medium. Add the butter, smashed garlic, rosemary, and thyme to the side of the pan. As the butter melts and foams, tilt the skillet slightly toward you and use a large spoon to continuously baste the hot butter over the top of the steaks. Cook until an instant-read thermometer inserted into the thickest part reads:

  • Medium-Rare: 130°F (54°C)

  • Medium: 140°F (60°C)

Transfer steaks to a wooden board and let them rest for 8 minutes.

4.Sauté the Garlic Spinach:Medium heat | 2 minutes.

In the same skillet with the leftover pan drippings and butter, toss in the fresh baby spinach. Sauté for 1 to 2 minutes just until wilted. Remove from heat and season with a pinch of salt and crushed red pepper flakes.

5.Slice Avocado & Assemble the Plate:2 minutes.

Slice the avocados into thick wedges or fans. Drizzle with fresh lime juice and extra virgin olive oil, then sprinkle with flaky sea salt. Slice the rested steak against the grain into thick ribbons. Divide steak, sautéed spinach, and avocado evenly between two plates. Pour any rested steak juices from the cutting board over the meat.

Chef’s Golden Rules for Success

  1. Dry the Meat Thoroughly: Moisture is the enemy of a good sear. Moisture creates steam, which yields grey, boiled-tasting meat instead of a crispy crust.

  2. Never Skip the Rest: Resting allows muscle fibers to relax and reabsorb juices. Cutting too quickly drains all the moisture onto your board, leaving dry steak behind.

  3. Slice Against the Grain: Look for the direction the muscle fibers run and cut perpendicular to them. This shortens the fibers, making every bite melt-in-your-mouth tender.
