Ingredients
- 1½ cups shredded mozzarella cheese
- ½ cup shredded sharp cheddar cheese
- 24 slices pepperoni
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon smoked paprika
- 1 tablespoon grated Parmesan cheese
- Fresh parsley, chopped (optional)
- Ranch dressing or marinara sauce for dipping (optional)
Kitchen Equipment
- Baking sheet
- Parchment paper
- Measuring cups
- Mixing bowl
- Cooling rack
- Spoon
Instructions
Step 1: Prepare the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
Step 2: Mix the Cheese
In a medium bowl, combine:
- Mozzarella cheese
- Cheddar cheese
- Parmesan cheese
- Garlic powder
- Onion powder
- Italian seasoning
- Smoked paprika
Mix everything together until the seasonings are evenly distributed.
Step 3: Form Cheese Mounds
Using about one tablespoon of the cheese mixture, create small piles on the prepared baking sheet. Leave approximately two inches of space between each pile because the cheese will spread while baking.
Flatten each mound slightly using the back of a spoon.
Step 4: Add the Pepperoni
Place one slice of pepperoni on top of each cheese mound.
For extra meaty crisps, gently press two pepperoni slices into the cheese.
Step 5: Bake
Bake for 10–12 minutes, or until:
- The cheese becomes golden brown.
- The edges turn crispy.
- The pepperoni curls slightly.
- Small bubbles appear around the edges.
Keep a close eye during the last two minutes since cheese can brown quickly.
Step 6: Cool
Remove the baking tray from the oven.
Allow the crisps to cool on the baking sheet for about 5 minutes. As they cool, they will become even crispier.
Transfer them to a cooling rack before serving.
Tips for Perfect Pepperoni Cheese Crisps

- Do not overcrowd the baking sheet.
- Let the crisps cool completely before removing them.

To restore crispiness:
- Air Fryer: 2–3 minutes at 350°F (175°C)

Common Mistakes to Avoid
- Using low-fat cheese, which doesn’t crisp as well.
- Removing the crisps too early before they cool.
- Overcrowding the baking sheet.
- Baking at too low a temperature.
- Overbaking until the cheese burns..
